Ingredients:
400g Diced Chicken
1 tablespoon Lemon Juice
1.5 teaspoons Garlic Granules
2 Chopped Tomatoes
1/4 cup Groundnut oil & 1 teaspoon of Paprika
1/2 cup Chicken Stock
1/4 large Butternut Squash
100g Green Beans
1 chopped Onion
1 teaspoon Crushed Chillies
Salt and Pepper to taste

I have set myself a challenge to make a dish inspired by every country in the world. If you haven't seen my other videos, check out the Food of the World Playlist which has all the dishes I have made so far.

Angola's National dish : Muamba De Galinha with Fungee and Stewed beans

-Muamba De Galinha ingredients:
3 tbsp fresh lemon juice
Chicken Bouillon
4 garlic cloves, minced
1 tsp white pepper
½ tsp salt
½ tsp dried thyme
½ tsp paprika
6 pieces of chicken- A whole chicken, quartered
½ cup red palm oil
3 onions, chopped
3 tomatoes, quartered
500g butternut squash or Pumpkin
1 cup chicken broth
250g okro, whole with head cut off
1-2 Scotch bonnet, chopped

1. To a large bowl, add in the chicken pieces, lemon juice, 2 tsp of the minced garlic, salt, chilli powder,  white pepper and mix well. Leave to marinate for 1 hr- overnight
2. Heat up the oil in a deep dish pan and add in the chicken, browning it on all sides. Add in the onions and the remaining garlic cloves, tomatoes,  paprika,  Bouillon stock. Bring to a boil then simmer for 20-30 mins or till chicken is soft.
3. Then add in the squash and okro and cook for about 15 mins or till tender.
4. Serve over rice or fungee


- Fungee ingredients:
2 cups Cassava flour (be sure it is Angolan-style Cassava flour, not Nigerian. The Nigerian one is starch even though it says flour😂)
4 cups Water

1. Bring 2 cups of water to a boil in a medium-sized pot
2. In a bowl, mix together the remaining 2 cups water with flour until smooth and lumpfree
3. Add this to the boiling water while stirring with a wooden skewer until it thickens slightly. Then add in a little water and cook on low heat for 10-12 mins.
4. It should now be much thicker and stickier . Stir and serve with the Muamba


-Stewed beans Ingredients:
Red kidney beans (I used canned)
Red palm oil
Pinch of salt
1. Heat up the palm oil in a pot and add in the beans and salt. Stir, let heat up and serve ith Muamba.

Ingredients (5-6 servings)
3 – 3 1/2 pound chicken cut in pieces
marinade:
Juice ½ lemon optional
1 teaspoon white pepper
1 teaspoon minced garlic
½ teaspoon dried thyme
1 teaspoon salt
½ teaspoon smoked paprika
½ teaspoon chicken bouillon powder

1/4 cup canola oil
1/2 cup palm oil
4-5 garlic minced
2-3 onions sliced
2 tomatoes diced
1 teaspoon white pepper
1 teaspoon smoked paprika
Whole hot pepper pierced chili, Scotch bonnet
½ -1 pound butternut squash cut into large cubes
18-20 Okra sliced in half
2 cups or more chicken broth or water
Salt to taste

CALULU – Angola - Delicious african recipe - Délicieuse recette africaine

Calulu is a traditional dish from Angola that was later introduced to São Tomé e Príncipe by plantation workers; and which would have a strange Brazilian origin.

Indeed, this dish would have been inspired by brazilian Caruru (initially a dish made from leaves and accompanying meats) revisited with the arrival of the Portuguese and their Angolan slaves, who introduced African ingredients such as okra and palm oil, at the base of this dish.

The revisited dish is said to have made its way to Africa with slaves aboard Portuguese ships returning to Angola for supplies and with new techniques that resulted in new dishes featuring African ingredients.

Calulu can also be prepared with meat or chicken.

Two brothers, originally from Boston, Edd and Tommy Golden, opened Iris in 2007, after falling in love with the picturesque location. Since opening it has become a popular restaurant amongst Carmel Valley residents, who love mixing great food with spectacular views. The menus are constantly changing and are fairly eclectic, never leaving diners bored with the same old offerings, although the local favorites are kept throughout the year. In addition, fresh, local and organic ingredients are used as much as possible!!!

The restaurant is open for both lunch and dinner, with most guests choosing to sit on the covered patio where they can enjoy the amazing views and the cool ocean breeze. One of the most popular dishes is their Clam Chowder, which is gluten-free by the way! Two brothers from Boston, you better believe their "chowdah" is nothing short of delicious!
