In Angola, there has not been enough rain to end months of severe drought that has left 2.3 million people struggling to get the food they need.
According to UNICEF, recent rainfall in Angola has been erratic and below what is expected.
Angola’s President Joao Lourenco declared a state of emergency in January and acknowledges that the people need help.

Angola's National dish : Muamba De Galinha with Fungee and Stewed beans

-Muamba De Galinha ingredients:
3 tbsp fresh lemon juice
Chicken Bouillon
4 garlic cloves, minced
1 tsp white pepper
½ tsp salt
½ tsp dried thyme
½ tsp paprika
6 pieces of chicken- A whole chicken, quartered
½ cup red palm oil
3 onions, chopped
3 tomatoes, quartered
500g butternut squash or Pumpkin
1 cup chicken broth
250g okro, whole with head cut off
1-2 Scotch bonnet, chopped

1. To a large bowl, add in the chicken pieces, lemon juice, 2 tsp of the minced garlic, salt, chilli powder,  white pepper and mix well. Leave to marinate for 1 hr- overnight
2. Heat up the oil in a deep dish pan and add in the chicken, browning it on all sides. Add in the onions and the remaining garlic cloves, tomatoes,  paprika,  Bouillon stock. Bring to a boil then simmer for 20-30 mins or till chicken is soft.
3. Then add in the squash and okro and cook for about 15 mins or till tender.
4. Serve over rice or fungee

- Fungee ingredients:
2 cups Cassava flour (be sure it is Angolan-style Cassava flour, not Nigerian. The Nigerian one is starch even though it says flour😂)
4 cups Water

1. Bring 2 cups of water to a boil in a medium-sized pot
2. In a bowl, mix together the remaining 2 cups water with flour until smooth and lumpfree
3. Add this to the boiling water while stirring with a wooden skewer until it thickens slightly. Then add in a little water and cook on low heat for 10-12 mins.
4. It should now be much thicker and stickier . Stir and serve with the Muamba

-Stewed beans Ingredients:
Red kidney beans (I used canned)
Red palm oil
Pinch of salt
1. Heat up the palm oil in a pot and add in the beans and salt. Stir, let heat up and serve ith Muamba.

CALULU – Angola - Delicious african recipe - Délicieuse recette africaine

🍍 🥑 🥘 🍴 🍃

Calulu is a traditional dish from Angola that was later introduced to São Tomé e Príncipe by plantation workers; and which would have a strange Brazilian origin.

Indeed, this dish would have been inspired by brazilian Caruru (initially a dish made from leaves and accompanying meats) revisited with the arrival of the Portuguese and their Angolan slaves, who introduced African ingredients such as okra and palm oil, at the base of this dish.

The revisited dish is said to have made its way to Africa with slaves aboard Portuguese ships returning to Angola for supplies and with new techniques that resulted in new dishes featuring African ingredients.

Calulu can also be prepared with meat or chicken.

------------------------------

If you're a foodie looking for a new culinary adventure, you won't be disappointed by the flavorful and diverse Angolan cuisine. Here are five must-try foods from Angola that will tantalize your taste buds
Muamba de Galinha: This is a flavorful stew made with chicken, palm oil, garlic, onions, and okra. It's often served with rice and can be spicy.

Moqueca de Peixe: This is a fish stew made with onions, tomatoes, coconut milk, and palm oil. It's a popular dish in many parts of Brazil, but it's also eaten in Angola.

Calulu: This is a traditional dish made with dried fish, vegetables (like kale or cassava leaves), and palm oil. It's often served with rice or funge (a type of cornmeal porridge).

If you are looking for a great place to indulge on some delicious food, while enjoying an incredible view of the Torrey Pines Reserve Lagoon, you should definitely check out Iris Restaurant in Del Mar. The restaurant is situated directly across the Los Penasquitos lagoon, on Carmel Valley Road, offering delicious lunch and dinner menus in a casual, yet professional environment.

Two brothers, originally from Boston, Edd and Tommy Golden, opened Iris in 2007, after falling in love with the picturesque location. Since opening it has become a popular restaurant amongst Carmel Valley residents, who love mixing great food with spectacular views. The menus are constantly changing and are fairly eclectic, never leaving diners bored with the same old offerings, although the local favorites are kept throughout the year. In addition, fresh, local and organic ingredients are used as much as possible!!!

The restaurant is open for both lunch and dinner, with most guests choosing to sit on the covered patio where they can enjoy the amazing views and the cool ocean breeze. One of the most popular dishes is their Clam Chowder, which is gluten-free by the way! Two brothers from Boston, you better believe their "chowdah" is nothing short of delicious! Even better, you can pair the delicious soup with their freshly baked bread. Perfect pairings just in time for the chilly weather we should be having soon.

So grab your friends, or business partners, and enjoy a nice, casual dining environment with great food and great views. It's perfect for any occasion, and you can't go wrong choosing any one of their handcrafted beers and wines to complement your food! Enjoy after a long day at the office or a relaxing Saturday by the beach.

Hi, I'm Iris. I'm originally from Cambodia.
I love cooking because both of my grandpas were chefs in the 1950s, grandpa from my father side owned a noodle bar and grandpa from my mother was a wedding function chef. However, when I was a little girl I didn’t know that I truly loved cooking because at the young age of 9 I was responsible for shopping and cooking for my family. As the eldest girl in the family I wanted to help my mum after school and I am so grateful that I could and at least now I know how to cook well. I love cooking now because my kids love eating my foods and their appreciation is so encouraging, and since cooking for FoodSt I love knowing that my customers are also enjoying my food so much. Thank you to all my supporters!

Our authentic ‘home’ cooks make delicious, generous meals in small batches and by hand, for the love of sharing not the limelight. Traditional family recipes are made from scratch using premium ingredients, a lot of love, generosity and care in our homes, then freshly frozen and delivered directly to yours.

The sweet bulbs of the Common Camas are considered by many to be a Northwest native food delicacy. The taste is often compared to a baked pear, fig, or sweet potato, and can even used to sweeten other foods. The longer they’re cooked, the sweeter they get. Native American peoples, wild foragers, and sustainable gardeners have and continue to value this plant as nourishing food.

Common Camas is also a major source of carbohydrates and very high in protein. It contains 5.4 ounces of protein per pound of root, even more hearty than a filet of Salmon with 3.7 ounces per pound. Bulbs can be eaten immediately after cooking, or dried for future use.

CAUTION: If harvesting from the wild, only harvest with expert advice. Especially when not in flower, Common Camas can be confused with another species called Death Camas.
