But when it comes to mouth-watering cuisines, very few ethnic groups in the country could compete with the Efik and Ibibio of Cross River and Akwa Ibom states.

Generally addressed as Calabar people, these tribes are known for their mastery of local ingredients, expert handling of seafood and aromatic spices.

In fact, folklore has it that a Calabar woman’s food can lead a man to do whatever she wishes.

This is how to cook Ekpang Nkukwo.

▪ Peel, wash and you can either grate or blend the cocoyam.
▪ Pick Your Cocoyam leaves into single segments from the mid ribs and wash free of sand and worm
.
▪ Add palm oil to grease and coat the base and side of the pot.
▪ Mix the grated cocoyam with little water and salt.
▪ Mix or beat the mixture properly to incorporate air until mixture is fluffy.
▪ Now scoop a small size of the paste with your fingers and wrap a little at a time, place gently in the pot. Continue wrapping and Place each wrap in the pot laying them properly.
▪ Add the fish, Pomo, Shaki, Stockfish MAGGI, pepper, utazi and periwinkles
▪ Place the pot on fire and add 2 cups of stock/ water around the edge of the pot and allow to cook slowly on low heat until set.
▪ Shake the pot at intervals to loosen the wraps and to prevent burning or sticking to the bottom.
▪ Add some more water and oil if need be and the scent leaves and curry leaves. Continue cooking for 10 minutes.
▪ Use a wooden spoon to stir gently so the Ekpang nkwukwo remains whole.
▪ Taste for salt, correct if necessary and finish up with the Uziza leaves. Stir gently and allow to simmer for 2 minutes.
▪ Serve piping hot.

Edikang Ikong is a Nigerian vegetable soup made with fluted pumpkin leaves and water leaves. This recipe shows how to cook Edikang Ikong soup.

1 big bunch fluted pumpkin(properly cut)
2 small bunches water leaves(properly cut)
1 onion
1 cup crayfish
Pepper (Yellow and red scotch bonnet)
3 seasoning cubes
1 cup palmoil
Meat
Kpomo
Dried fish
Stock fish
Salt to taste

Place washed meat, kpomo, stock fish and dried fish in a pot. Put in some water, one seasoning cube and some salt. Bring to a boil. The water should be small because Edikang Ikong does not require much water.

Blend pepper, onion and crayfish together. Pour this Mix into the meat pot when it is almost ready.

Add palm oil. Add the remaining seasoning cubes. When the liquid in the pot is almost dry, add water leaves, stir and allow to cook for about 2 to 3 minutes. Add the fluted pumpkin leaves, stir properly and correct seasoning. Let the leaves cook for about five minutes before turning off the heat. If you like your leaves a little more cooked, you can let them cook for a little longer.

Serve with semovita, eba, pounded yam or any swallow of your choice.

Kitchen Tip: Sprinkle a little salt on the cut ugu leaves a let stand for some minutes. Squeeze the leaves and you'll notice some water coming out. This will reduce the amount of liquid you have in your Edikang Ikong.

Water yam 5 small chunks
Water 3 tsp (for blending)
Palm oil 1 cup
Ugu or Cocoyam leaves for wrapping
Seasoning
Dried prawns
Crayfish powder
Bonga fish
Ponmo
Meat stock or hot water
Periwinkles (shelled or deshelled)
Chopped ugu for garnish

South Africa, officially the Republic of South Africa, is the southernmost country in Africa. It is bounded to the south by 2,798 kilometers of coastline of Southern Africa stretching along the South Atlantic and Indian Oceans; to the north by the neighboring countries of Namibia, Botswana, and Zimbabwe; and to the east and northeast by Mozambique and Swaziland, and it surrounds the enclave country of Lesotho. South Africa is the largest country in Southern Africa and the 24th-largest country in the world by land area of 1,221,037 km2 and, with over 58 million people, is also the world's 24th-most populous nation. South Africa is a multiethnic society encompassing a wide variety of cultures, languages, and religions. Its pluralistic makeup is reflected in the constitution's recognition of 11 official languages, which is the fourth-highest number in the world. The capital of South Africa is Pretoria and its official currency is the South African rand. 10. Robben Island, Western Cape
What other place in south Africa can sum up the painful past of the nation like the Robben Island. In Table Bay, World-Heritage-listed Robben Island is a haunting reminder of the horrors of apartheid. Nelson Mandela spent 18 years imprisoned in a tiny cell here along with other political dissidents and social misfits. Perhaps the best part about this experience is that ex-prisoners are usually the guides, sharing poignant first-hand accounts of the atrocities they endured. Tours to the island begin with multimedia exhibits in the museum at the Nelson Mandela Gateway at the Victoria and Alfred Waterfront. Sightseers then board boats to Robben Island, often braving rough swells on the 30-45-minute ride. Be sure to book early as the tours can fill up fast, and why it not, everyone wants to have this unforgettable experience.


9. Hermanus, Western Cape
Located 120 kilometers southeast of Cape Town, the seaside town of Hermanus has earned itself a reputation as the whale-watching capital of South Africa. Every year, migrating southern right whales pass within a few hundred feet of the Hermanus shoreline, with many of them stopping to breed and calve in the town's own Walker Bay. You can book a tour with one of Hermanus' many whale-watching boats, or you can enjoy the whales' antics for free from any of the lookout points along the Cliff Path. In the center of town, the restaurants that line scenic Gearing's Point are a great place to sample gourmet cuisine while keeping an eye out for passing cetaceans. The whale-watching season lasts from July to November, but there are also plenty of other attractions worth seeing in Hermanus year-round.
8. The Drakensberg, KwaZulu-Natal
The spectacular Drakensberg, meaning "Dragon Mountains," is one of the most popular vacation destinations in South Africa and home to the country's highest peaks. The region encompasses the World Heritage-listed uKhahlamba-Drakensberg Park, a region of jaw-dropping beauty with jagged basalt buttresses and San rock art, and Royal Natal National Park, home to the awe-inspiring Amphitheatre, a magnificent cliff face and source of South Africa's main rivers. The Giant's Castle Game Reserve in the region protects large herds of eland. Dense forests flourish in the sheltered valleys, and the area is home to more than 800 different species of flowering plants as well as a rich diversity of wildlife. In the summer, the mountain landscapes are lush and fertile with gushing waterfalls and crystal-clear streams while in the winter, snow cloaks the dramatic peaks. Visitors flock here to hike and bike the scenic mountain trails, fish for trout, rock climb, abseil, parasail, and raft the waters of the fast-flowing rivers. 2. MAC MAC FALLS - The Mac Mac Falls is situated between Graskop and Sabie. The 65 m high Mac Mac Falls in the Mac Mac River is a declared National Monument. This Mac Mac Falls was originally a single stream, but gold miners blasted it with dynamite to divert the river in an attempt to work the rich gold-bearing reef over which it plunges.

3. BLYDE RIVER CANYON - Another hidden gem in South Africa is the Blyde River Canyon. This canyon is located in Mpumalanga and is one of the largest canyons in the world. 10. Bloemfontein
Welcome to the “City of Roses”, Bloemfontein which is an oasis of fertile agricultural land and city splendour in a province known for its dry and arid landscapes. Located in the central region of South Africa, it is a popular pit-stop for tourists travelling from Johannesburg to the Cape. It is also the judicial capital of the country. Thousands of rose bushes line the city streets. More than 4,000 rose trees have been planted in the rose gardens in Kings Parks and locals pride themselves on their annual shows. The city offers a relaxed and peaceful lifestyle which is an escape from the typical bustling South African cities with several graceful museum buildings, historical homes that capture the essence of the country’s history.

9. Polokwane
Lying between Pretoria and the border to its north, Polokwane is a grimy city that acts as an administrative and industrial capital to the Limpopo Province. Polokwane or ‘Place of Peace’ is a vibrant city of mixed people and culture located in the Great Limpopo Transfronteir Park with mystical, eco-adventure landscapes.It is a modern city with all the popular restaurant, hotel and entertainment amenities as well as on a flip side, it is the gateway to a diversity of natural attractions from mountains to wilderness areas.Polokwane is closely located to many of the premier game reserves in the northern region of South Africa. The region is geared for tourism and visitors have a choice of open-air ‘living’ museums that showcase traditional Sotho culture and you can even walk with lions at a local tourist facility.

8. Kimberley
This historic city was founded on diamonds and is affectionately known as the ‘Diamond City’. It is best known for the Great Hole of Kimberley which is the largest hand-dug excavation in the world. The city is characterised by period buildings that have been preserved or restored to their original glory including a church built in Europe and shipped to Kimberley. Back on top, visitors have a glittering choice of jewellery stores, excellent restaurants and shopping malls to work their way through. A few kilometres from the city centre is Kimberley’s oldest residential suburb, Belgravia. The suburb dates back to the 1870s and was the home of many of the great mining magnates. They say there once was more millionaires in this area than anywhere else in the world. Visit the Big Hole and the accompanying recreated mining settlement to step back into the past and experience how Kimberley used to be. Located in the Northern Cape, it has some great museums and fine old buildings which are steeped in history, as well as a scattering of decent hotels and restaurants.
