Edikang Ikong soup is made with Ikong(Ugu or Fluted pumpkin leaves) and Nmong Nmong Ikong(Waterleaf). This Nigerian vegetable soup which is also referred to as Calabar vegetable soup has a few rules that if followed properly will result in delicious crowd pleasing soup.

The key to delicious Edikang Ikong is to make sure that there is little or no water in it, and it should be packed with flavour.

Edikang Ikong can be eaten with Eba, Pounded yam, foofoo, or semovita.

All the ingredients used in this recipe contribute to flavouring our Edikang Ikong. These are the following ingredients;

Ikong(Ugu)
Nmong Nmong Ikong(waterleaf)
Dried Catfish
Yellow pepper
Habanero
Crayfish
Palmoil
Seasoning cubes
Pomo
Shaki
Salt

The Ikong(Ugu) should be double the quantity of Nmong Nmong Ikong(Waterleaf)
